Our History
Caelum is a family project that was born in 2009. After more than ten years of dedicated farm work and selling grapes to neighboring wineries, we decided to complete the cycle of the vine elaborating wine. With passion, every day we seek for the highest quality, respecting the environment and maintaining a family structure to ensure the care of each bottle.
The Vineyard
The care of the vineyards is the basis to achieve the desired results in our wines. Pruning and green harvest together with leaf – pulling and weeding, major pre-harvest activities, are coordinated by Mercedes and Giuseppe who work together to obtain the best quality out of our grapes.
Our vineyard´s training system is "espaldero" and they are fully secured from hail with a protective mesh. The vines are watered with drip irrigation as to control and optimize the use of water, our most valuable resource.

Fresh, light pink colored wine, red fruit aromas like strawberries and floral notes. Acidity and alcohol are well balanced making it ideal as an appetizer.
Wine of deep and intense color with purple highlights. Black pepper and ripe red fruit aromas. At mouth it has a wide entry and notable structure, great persistence that highlight its fruit bearing and spicy aromas.
Lively deep red colored wine with purple highlights. Ripe red berries and dried prune at nose. At mouth it appears as a fresh and elegant wine, with a long persistence.

Red wine with a deep red ruby color and violet highlights. Presents fruity aromas such as red fruit and ripe cherries. Very elegant, smooth and fresh in mouth, also shows a long persistence.
Caelum Cabernet Sauvignon Reserve PDF
Red wine of intense ruby red color with purple highlights. Presents aromas of ripe red fruits and spicy notes, such as black pepper, clearly marked. It distinguishes by its wide palate entry and remarkable structure, good acidity and firm tannins. Shows a very persistent end and the aftertaste highlights again the spicy notes followed by chocolate.
